I started Lo & Behold out of a love for food, tea, and the experience of sharing a great bottle at the table. I believed more meals deserved a thoughtful pairing, and tea naturally brings structure, acidity, texture, and complexity in a way few ingredients can. Lo & Behold is my attempt to bring those qualities into a sparkling format designed for meals, celebrations, and gathering together.
